Red Cabbage sauerkraut

One of the best things you can do with red cabbage is to make sauerkraut. They say that fermented foods are really good for you and it's very easy to make your own actually. I take a red cabbage and slice it thinly in
my cuisinart food processor. Then I pound it for about 10 minutes with salt. about a tablespoon of salt with about 1/2 a small cabbage- pounded down it fits into a quart jar. I added some caraway seeds. You can also add Juniper berries. So he had some salt water to top it off with the natural juices. And then you pull the leaf over and put it over the top of the cabbage. You put a lid with a vent on it. it will get fizzy in a few days and then after four days, you put it in the refrigerator and it is edible and fermented.
