Bon Appetite --Souffle!

Today was my first attempt at a souffle. I made it with carrots and parsnips. My son and his family came over and ate with me. The theme was french, with a french table cloth, herbs provence in the coleslaw and croissants. One of my grandughters refused to try the little souffle in a remekin and that hurt my feelings a little bit! the croissants were from the Blue Heron Bakery.
