Canning Mutton Stew

I like sheep meat. I feel bad about the little lambs so I eat mutton. It does not taste bad at all. Today I went to the farm where they were raised (the sheep that is.) it's a lovely farm in the hills above Naples. He raises pigs, sheep, and cows, beef cows. They are pasture raise so they're humanely raised and the meat is healthier. The animals get to frolic in the pastures and enjoy life while they're living. There are no growth hormones in the meat. I thawed the mutton kabobs(equivalent to stew meat) and bought some carrots. My friend steve l. had given me some potatoes last weekend. The potatoes were amazingly fresh. They were really hard to cut. They were so firm. The jars were filled with the cut up vegetables, but the meat went in first. I also added onions thyme and salt. There's a lengthy process you have to know about when you're canning. you can look it up on the Internet. Plenty of people have done videos.
