I created a few batches of jelly and quince paste and realized that those products are very sweet. I then made quince sauce and mixed it with apple sauce. This came out quite tastey. I guess when you sugar the quince up you lose some of its natural flavor. The sauce was certainly not as sweet as quince paste. With the quince paste I made a layer cake with whipped cream frosting. The cake was a yogurt cake and I used buckwheat flour. My family loved it. I am not very experienced at cake making. Every one wanted me to write down the recipe.
I also made a batch of jam and sold it to a friend. He was amazed that quince grew around here, he has been getting his quince jelly from Greece.
